Pesto Courgetti

This meal is so comforting. It’s thick, creamy and full of flavour. I think these are things that people fear they will miss out on by eating a healthy diet but the good news is you certainly don’t have to! This healthy pesto combines most of the traditional ingredients such as: garlic, basil and pine nuts. It omits the cheese which isn’t great for us and instead there is creamy avocado which makes this pesto taste so indulgent. The lemon and garden peas give this heavy sauce a freshness which lightens it to create a wonderful dish.

I made this meal for tea after a gym class this week and it was perfect as it is so full of plant protein. I made two portions but during the process I only cooked half, the other half went into a tupperware to take into uni with me the next day and enjoy raw – I can tell you now that both were delicious! Here is the recipe to serve two warm portions…

Ingredients:

2 Courgettes
4 cloves of Garlic
2 Lemons (juice and zest)
1 handful Rocket
1/2 cup Brazil Nuts
1/4 cup Pine Nuts
2 tbsp Olive Oil
4 tbsp Water
1 large handful of Fresh Basil
1 Avocado
2/3 cup Garden Peas

Add your peas to a saucepan of water and let them boil for a couple of minutes. Fry the finely sliced garlic in a frying pan with olive oil for a couple of minutes while spirulizing your courgette. Once the garlic is beginning to brown, add the courgetti to the pan and let it heat through on a low heat. Meanwhile, blend your brazil and pine nuts before adding the flesh of the avocado, the juice of 1 lemon, rocket, olive oil, water and basil. When this has blended into a delicious pesto, add it to the pan with the courgette and garlic so it can all warm through together. Add the pesto courgetti to your bowls and top with the juice from the other lemon as well as lemon zest. I like to scatter a few whole pine nuts on top to finish it off.
