Vanilla Overnight Oats


This is a great breakfast for those days when you don’t have much time but still want something delicious and filling. Its ingredients will provide your body with slow releasing energy which should see you through that first part of your day feeling energised and alert. The chia seeds give a wonderful boost of omega 3s which are essential for brain functions. I think we’d all welcome a boost to our brain power first thing!

These oats take less than 5 minutes to put together the night before, at which point it may seem like nothing special, but overnight it prepares itself while you sleep so when you wake up you’ll have a thick, creamy breakfast waiting in the fridge. In the morning just add on the toppings you like and enjoy.


3 heaped tbsp Oats
1 tbsp Flax Seed
2 tbsp Chia Seeds
1 handful of Raisins
180ml cup Oat Milk (or any other non-dairy milk)
1/2tsp Vanilla Essence

Possible toppings:

Nut Butter
Cacao Nibs
Bee Pollen
Goji Berries
Fresh berries
Drizzling of maple syrup or raw honey

I topped mine with organic crunchy peanut butter, cacao nibs and bee pollen for some extra protein.

Simply place all of the ingredients for the mixture into a jar and stir them together before putting into the fridge. With the lid on the jar, the chia seeds will expand and all of the ingredients will soak up the milk becoming soft and plump. In the morning just add your toppings and you’re done!
