These energy bites taste so sweet and fruity – perfect for spring-time snacking. They are filling due to their protein and healthy fat content yet their flavour is lighter, suitable for these sunnier months.
Baobab powder is the secret ingredient that creates such a fruity flavour. This is a superfood which can be bought online or from health food stores. Although this recipe will still work fine without it, it adds a berry flavour and provides huge amounts of vitamin C. It actually has 6 times more than oranges which are known for being a good source of vitamin C. This makes baobab an almighty source! It’s also high in iron which is great for boosting energy levels and vitamin C is needed for the absorption of iron in our bodies therefore it’s a match made in heaven.
I’ve used a combination of brazil nuts, walnuts and pecans. All nuts are a great source of fibre, protein and healthy fats yet each have their own benefits too. Brazil nuts provide us with selenium, which is often lacking in the diet due to our overworked soils, while walnuts are great brain food as they are high in omega-3s and pecans are rich in magnesium, a mineral known for its anti-inflammatory benefits. That’s why combining all three creates a powerhouse of nutrition all rolled together into one super tasty nutty ball!
Ingredients (makes 15-20):
300g Medjool Dates,
1/3c Brazil Nuts
4 tbsp Baobab Powder
2 tbsp Coconut Oil
2 tbsp Chia Seeds
2 tbsp Desiccated Coconut
1 tbsp Almond Butter
Firstly blend the nuts so they can break down into small broken parts then add the pitted dates and the rest of the ingredients. Put in the freezer for an hour to set then they can be stored in the fridge for whenever you’re in need of a sweet treat.
