It’s so fun finding ways of creating well-loved foods in a much healthier way. As it’s getting closer to summer and we’ve been enjoying some lovely sunny weather you may be looking forward to some silky smooth, cooling ice cream. Unfortunately it has often got lots of ingredients which won’t make our bodies feel so great but this recipe allows you to totally indulge in a delicious treat without the after effects of feeling tired or bloated. I hope you are as excited about this recipe as I am!
The aromatic flavours of this dessert combine to create a truly unique flavour that only takes minutes to make. I think this might be the best ice cream I’ve tasted! All the ingredients are whole foods with natural sugars and healthy fats which will nourish your body as well as your taste buds. The crunch from the pistachios adds a wonderful texture combination to this heavenly traditional creamy delight. This is certainly one to impress all!
1 banana (sliced and frozen over night)
3 tbsp Coconut Milk
2 Vanilla Pods
1 Handful Pistachios
1 tsp Cinnamon
Firstly blitz the pistachios in a food processor for about 10 seconds so that they are broken down but are not ground. Add the frozen banana slices and blend. Whisk the firm and liquid parts of the coconut milk together then add 3 tbsp of it to the processor. Scrape out the contents of the vanilla pods and add to the mixture. Blend everything together until an ice cream consistency is formed then transfer to a bowl. At this point, stir in the cinnamon to create a sweet, dark swirl and top with a few crunchy pistachios.
