Last weekend I went to the market and got carried away and bought stacks of the delicious-looking fruit so I later ended up with pieces starting to go past their best. I absolutely hate wasting food and there is a simple solution to this problem – whizz them up into yummy smoothies!

I don’t usually eat kale but I know how incredible it is for our bodies and thought it was time to give it another go. By halving the amount of spinach I usually put in smoothies and filling it with kale, it meant that it didn’t provide a strong taste at all and all the sweetness from the fruit totally takes over. The reason I have tried to squeeze kale in is because it’s incredibly high in iron, is a wonderful source of calcium and packs in a whole abundance of vitamins and minerals!

This is a great summer smoothie that will totally satisfy you with its high content of healthy fats. It’s sweet and fruity while the coconut milk and oil adds a tropical taste.

Ingredients:

1 Nectarine
1 handful Cherries
1 handful Berries (frozen berries will make it extra cold – good for a hot summer day)
1 small handful Kale
1 small handful Spinach
1 tsp Coconut Oil
1 tbsp Flax Seed
1 tbsp Chia Seed
2/3c Coconut Milk (or any other non-dairy milk)
1 Vanilla Pod (optional)

Remove the stones from the nectarine and cherries and add to your blender along with the rest of the ingredients including the seeds from the vanilla pod, if using. Blend, pour into a glass, and enjoy.
