Chia seed pudding is a great choice for breakfast as it’s full of essential fatty acids which help your brain to work efficiently. Also, this meal is prepared the night before eating so it makes this such an easy, quick option for those mornings when you don’t have time to make breakfast as well as eat it. The ingredients are simply mixed together at night time then stored in a lidded jar in the fridge; overnight it prepares itself as the chia seeds swell to create a creamy texture, then, you can even take the jar with you to work or the gym or wherever else calls you in the morning.
I’ve used tropical flavours of pineapple and mango which are so sweet and refreshing, perfect for summer time. This can be your go-to breakfast when short of time but still want a tasty, filling breakfast. (Trust me, it tastes better than it may look!)
1 c Mango and Pineapple
5 tbsp Chia Seeds
1 c (250ml) Almond Milk
1 tsp Honey
Slice the pineapple and mango and add to a blender with the chia seeds, almond milk and honey. Blend the ingredients together then pour into a jar. Put the lid on and leave overnight. In the morning just pour into a bowl or take the jar with you.
